Sweet
Potato Pie
Ingredients:
4 large sweet potatoes
1 1/2 cups sugar
1/2 cup brown sugar
1 stick butter
1 pinch cinnamon
1 pinch nutmeg
1 pie crust
1 tsp. vanilla
1/2 cup milk
1 can sweetened condensed milk
Directions:
Boil sweet potatoes until tender, but firm. (The sweet potatoes
should not be falling apart.) Remove from hot water and let cool.
Once cooled, peel the skin from the sweet potatoes.
Put the peeled sweet potatoes in a large mixing bowl and mash them
thoroughly with a potato masher. Melt the butter and pour it - with
the other ingredients - in the bowl of potatoes. Stir until well
mixed.
Pour the potatoes mixture into a prepared pie crust and bake in 375
F oven for 35-45 minutes, or until a toothpick inserted in the
center comes out dry.
